The datil is grown almost nowhere but around St. Augustine, Florida, where it has been part of local cooking for generations. This bottle is made the way St. Augustine likes it: a sweet, tomato-based datil sauce with honey, molasses and cane sugar up front, a savory Worcestershire backbone, and datil heat that shows up right behind the sweetness. We keep it at Medium so the pepper's fruit comes through.

It sits somewhere between a hot sauce and a glaze. Brush it on shrimp or chicken on the grill, dip fried fish in it, or put it on a burger instead of ketchup.

Good on: shrimp, fried fish, chicken, pork, burgers, eggs.
