Ghost Pepper Hot Sauce
The bhut jolokia was the first chile ever measured past one million Scoville units, and it held the world record for years. It earned the reputation. What the reputation leaves out is that it tastes good: underneath the burn there is a sweetness and an earthy, slightly smoky character that most superhot peppers do not have.
We make one ghost pepper sauce. Ignored The Warning is built on jolokia mash backed by red habanero, with a mustard and cumin base, garlic and turmeric to give the heat something to sit on. We rate it Extreme, around 120,000 Scoville units in the bottle — roughly six times our habanero sauce and a real gap above everything else we make.
Use drops, not pours. A few drops on wings, chilli, ramen or pho does more than a heavy hand, which mostly erases whatever else is on the plate. It contains mustard, the only bottle in our range that does, and like all five sauces it is gluten free.
