A chipotle is a jalapeño that has been smoke-dried, and the process turns a bright green pepper into something deep and woody that raw peppers cannot produce. This is the bottle that tastes like it came off a fire. Aged red chipotle up front, a small amount of sugar underneath so the smoke reads slightly sweet, onion and garlic for body, and aged tabasco peppers to sharpen the finish.

We rate it Very Hot — four marks on our scale. It earns the higher rating for how the heat lands rather than how high it climbs: lower and rounder, more coal than spark, and it stays on the back of the palate long after a sharper pepper would have gone. It is the one that did not end up where we expected on the scale.
