Five became eight. Bad Decision Hot Sauce has three new sauces: Sweet Regret (peach, Mild), Bad Call (datil, Medium) and Wrong Choice (mango Scotch bonnet, Hot). All three are 5 FL OZ bottles at $12, available now online and on our table at the Saturday market.

In short: Sweet Regret is a mild peach hot sauce made with real peaches, jalapeño and cayenne. Bad Call is a sweet, tomato-based St. Augustine-style datil pepper sauce rated Medium; it contains fish (anchovy). Wrong Choice is a hot mango Scotch bonnet sauce with mango as its first ingredient. Each is $12, recipes developed in Royal Palm Beach, Florida, and bottled in Jacksonville.

Why three more

The original five run in a straight line from garlic to ghost pepper. What the lineup did not have was sweet heat — fruit up front, peppers behind it — and it did not have a sauce built on a Florida pepper. The three new bottles fill both gaps, and they slot into the heat scale rather than stacking on top of it.

The new lineup, mildest to hottest

Sweet Regret — peach, Mild

Real peaches and cane sugar up front, with red chili, green jalapeño, cayenne and a touch of capsicum oil behind them. Vidalia onions and a little tomato keep it savory rather than jammy. It is the easiest bottle in the lineup to over-pour, which is where the name comes from. Best as a glaze: brush it on pork chops or chicken thighs in the last few minutes on the grill. Bad Call — datil, Medium

The datil pepper is grown almost entirely around St. Augustine, Florida. Bad Call is made the way St. Augustine likes its datil sauce: tomato-based and sweet, with honey, molasses and cane sugar, a savory Worcestershire backbone, and datil heat right behind the sweetness. It sits between a hot sauce and a glaze — excellent on shrimp and fried fish. It contains fish (anchovy, from the Worcestershire) and sulfiting agents. More on Bad Call and the datil pepper.

Wrong Choice — mango Scotch bonnet, Hot

Mango is the first ingredient, and it tastes like it. Behind it sits red Scotch bonnet, the pepper behind Caribbean jerk: fruity, a little floral and seriously hot.
