Datil Hot Sauce
The datil pepper is Florida's own. It grows almost nowhere but around St. Augustine, where it has been part of local cooking for generations. It is sweeter and fruitier than most hot peppers, and most people outside Florida have never tasted one.
Bad Call is made the way St. Augustine likes it: a sweet, tomato-based datil sauce with honey, molasses and cane sugar up front, a savory Worcestershire backbone, and datil heat right behind the sweetness. We rate it Medium so the pepper's fruit comes through.
It sits somewhere between a hot sauce and a glaze. Brush it on shrimp or chicken on the grill, dip fried fish in it, or put it on a burger instead of ketchup.
